Nakst Apricot. Not quite one panel but almost. No differential unison engine but if you use Bitwig you can achieve the same effect with voice stacking

Ask yourself this....if someone if looking for "simplest one panel subtractive" do you think they want to faff about with voice stacking in their DAW?

If we're going to move the goal posts of complexity we might as well just recommend DUNE 3 since it is the evolution of DUNE 1.

Apricot is a great synth but one does require a CLAP capable host. I suppose it would have been a good idea for the OP to list his OS and DAW(s) to save us from suggesting synths that he might not be able to run. :shrug:
